You can’t go wrong with a classic. Basic pancakes are the perfect camping breakfast, especially if you have kids. 

The downside is that they’re easy to mess up the griddle tends to get too hot and burn the edges of your pancakes before the center cooks through, or it might not heat up enough and your batter will just sit there cooling until it turns into a lumpy mess instead of nice round discs. 

To avoid these problems, try making this recipe in a cast iron skillet over your fire instead of on a griddle it’s much easier to control the heat when you’re cooking over an open flame!

To make eight 4-inch pancakes:

In a large bowl, whisk together 3 cups flour (or 1 cup whole wheat flour), 1 tablespoon baking powder and ½ teaspoon salt until well combined. 

In another bowl, combine 1 ¼ cups milk (or soy milk) with 1 large beaten egg until smooth; pour into dry ingredients along with ½ cup melted butter or vegetable oil. Stir until just combined—there should be lumps throughout—then let sit while you heat up your pan over medium/low heat for 5 minutes.

Using paper towels or an old rag, wipe excess fat from inside bottom surface of skillet so that it barely coats bottom surface; turn burner on high while continuing to wipe down bottom surface every few seconds until blackened bits have been removed but not so much that holes appear in coating.

When ready to cook pancake batter: Tilt pan so there’s plenty of room at one side; pour batter into center then quickly spread out as thinly as possible using backside wooden spoon handle (otherwise known as “pancake spreader”).

Cook for about 2 minutes per side until golden brown; remove from stovetop immediately once done.

Serve warm with maple syrup

Mini Cheesy Pizzas

Ingredients:

1 packet of refrigerated pizza dough (or 2 cups of homemade)

2 tablespoons olive oil, plus more for brushing the dough

2 cups shredded mozzarella cheese, divided. You can use all low-moisture, or a combination of regular and low-moisture. I prefer a combination because the lower moisture makes it easier to stretch out the dough without tearing it.

1/2 teaspoon salt, plus more for sprinkling on top

Directions:

Preheat oven to 425 degrees F., with rack in middle position (if using an oven stone). Lightly grease two baking sheets with nonstick cooking spray; set aside.

For each mini pizza, cut sheet into 4 equal pieces horizontally; you should have 8 rectangles from each sheet of pizza dough after cutting them horizontally into quarters lengthwise (total 16 pieces). 

Divide 1 tablespoon olive oil between 8 pieces of dough; brush tops gently but thoroughly with oil and sprinkle with salt if desired (this will allow pizzas to cook evenly). 

Top 8 pieces each with 1/3 cup mozzarella cheese per piece spread evenly over surface (the remaining 2 tablespoons will be used later). 

Place remaining 8 pieces on top so they cover everything else up completely–you may need to let them sit there while you make sure that they aren’t sticking together before placing them on top! 

Bake until golden brown on bottom and crisp around edges (7–9 minutes); remove from oven immediately so they don’t get soggy! 

If any parts start getting too dark before others are done then cover those parts directly after removing pan from oven using aluminum foil so no moisture gets trapped inside as well as prevent burning additional areas.

My favorite way is adding cinnamon sugar on top for extra flavor – sprinkle some on each batch as soon as they come out of the pan so it melts into every kernel before sprinkling more over entire batch once cool enough for eating 🙂 

You could also use honey instead of sugar syrup since honey would make everything taste sweeter 😉

Caprese Salad Skewers

  • Use cherry tomatoes.
  • Use fresh mozzarella.
  • Use basil leaves, as many as you can find!

Pour a little olive oil and balsamic vinegar over the top of each tomato, mozzarella cube, and basil leaf before skewering them and roasting them over the fire for about 5 minutes or so on each side until they’re soft and delicious-looking. 

When you’re done with that step (which should be easy enough), toss in some salt and pepper before digging in!

Roasted Cinnamon Pineapple

  • Peel and slice the pineapple.
  • In a bowl, mix together brown sugar and cinnamon.
  • Lay out aluminum foil in an oven-safe pan with edges that you can fold over the top of your fruit when it’s done cooking.

Spread pineapple slices on top of foil-lined pan, then sprinkle brown sugar mixture on top of each piece. Bake at 350 degrees for 20 minutes or until golden brown and bubbly around the edges. Serve hot with vanilla ice cream (or just enjoy by itself).

Cast Iron Dutch Oven Peach Cobbler with Ice Cream Topping

You will need:

  • cast iron skillet (use a Dutch oven if you have one)
  • 1/4 cup sugar, a pinch of cinnamon, and a pinch of nutmeg
  • 2 peaches sliced in half lengthwise and pitted
